Inarizushi
When my mom made rice in the old style simple electric rice cooker, she always made a ton extra. One of our favorite ways to use that extra was to make Inarizusi out of it. I am pretty sure that ai could find the necessary fried tofu wrappers soaked in Mirin (sweet sake) in an asian market, but there’s none nearby so I order cans of them from Amazon like everything else these days.
The particular brand depicted here is the exact same as my mom used best I can (pun intended) remember. Certainly the taste, texture and size are exactly what I remember.
This batch was made from leftover rice they so prepared “sushi” style with a mixture of Mirin and rice wine vinegar. It included chopped up leftover pork in the center for a bit of protein to balance the carbs and add a change in texture and taste.
